Raw bitter almond (Prunus amygdalus amara) contains amygdalin, a cyanogenic glycoside which releases highly toxic hydrocyanic acid (HCN) during enzymatic hydrolysis after cell damage.
The HCN content of raw bitter almonds can reach 3,000 mg/kg.
Direct ingestion is fatal; 5 to 10 almonds are enough to fatally poison a child.
Unprocessed raw bitter almond oil is prohibited for direct sale to consumers in the EU, USA and most regulated markets.
Natural bitter almond oil contains residual HCN, it is subject to IFRA/REACH regulations for perfumery and cosmetic use.
Debittered bitter almond oil (DPHP, depleted prussic acid) complies with EU/USA cosmetic standards, HCN eliminated, benzaldehyde retained.

Taliouine is known worldwide for its saffron, labeled AOP since 2010, it represents 62% of national production. What is less known: the Amazigh farming families who cultivate saffron in these mountains at 1,200–1,500 meters above sea level have also been growing wild almond trees for generations, as additional income. Ouled Berhil, a few kilometers northwest towards Taroudant, is at the heart of the region's cooperative fabric, an area where argan, saffron and almonds share the same slopes. The Anti-Atlas here is arid, dry, cold in winter, scorching in summer, the natural stress that forces the wild almond tree to concentrate its chemical defenses in the fruit, producing high concentration amygdalin and therefore a high quality natural benzaldehyde after hydrolysis. This is the reason why the bitter almond from this area is recognized by international natural perfumery operators.

A natural molecule with high value in perfumery, cosmetics and food flavoring.
Bitter almond contains amygdalin, a natural cyanogenic glycoside. During enzymatic hydrolysis (hulling, grinding), amygdalin breaks down into benzaldehyde, hydrocyanic acid (HCN) and glucose. Benzaldehyde is the desired aromatic molecule, it is what gives the characteristic smell of bitter almond, cherry, marzipan. The HCN is removed during the debittering process (DPHP), leaving the pure, harmless and active benzaldehyde.
The natural version of benzaldehyde from Moroccan bitter almond is chemically identical to the synthetic version, but its natural origin, traced and certifiable, gives it a market value 3 to 5 times higher on the natural perfumery (IFRA Natural, COSMOS, Na True) and natural flavorings (EU regulation 1334/2008 on natural flavorings) markets.
